Food is metabolised to provide energy which is used to maintain vital functions and keep the body at 37oC. During physical exertion energy is produced in the muscles at a rate 50 to 100 times that produced at rest.

Fatty tissue is distributed around the body and is the largest fuel store in the body. Fatty tissue provides 35-40 Kilojoules of energy per gram.

 

Glycogen is another very important fuel store. It is stored in the muscle and liver and is a limited source of energy. Glycogen, along with fat and protein to a lesser extent, is used as an energy source when exercise is maintained for up to 2 hours at moderate intensity.
