Enzyme action in the mouth

The action of enzymes is to speed up specific reactions in the body. They are not used up during the reaction. Below is a simple animation of the hydrolysis of starch to release glucose.The hydrogen bonds in the enzyme molecule give the enzyme a unique shape and specificity for the starch molecule.

 

 

Starch digestion starts with the enzymes inthe saliva. The starch is broken down into glucose  molecules. WHen eating fried potatoes one notices a sweet taste. This is due to the glucose being released.
