Cooking with carbon dioxide.

As we saw earlier, carbon dioxide is used extensively when baking cakes and bread. Carbon dioxide is produced in the kitchen in two different ways.

The first is with the use of Bi-Carb Soda. This chemical decomposes when heated to release carbon dioxide. This powder is mixed into the dough before baking.

The second chemical reactions involves the use of micro-organisms called yeast. These microbes use sugar to produce alcohol and carbon dioxide. The alcohol escapes during cooking but the carbon dioxide expands inside the dough creating large cavities.

Carbon dioxide can be produced in the kitchen by mixing vinegar and Bi-Carb Soda.
