Emulsifier

Soaps are an example of emulsifiers. Emulsifiers allow oil and water to mix. If oil is added to water emulsifiers allow the formation of small droplets of oil that float in the water.

The oil and water in this salad dressing separate out into layers. They will not mix.This dressing contains oil and water but will not separate into layers. It contains an emulsifier.
